Ingredients

Pesto Aioli

  • ½ cup mayonnaise
  • 2 tablespoons basil pesto
  • teaspoons fresh lemon juice
  • 1 small clove garlic
  • to taste salt
  • to taste black pepper

Sandwich Ingredients

  • 6 pieces ciabatta rolls
  • ¾ cup olive oil
  • 1 cup arugula or spinach
  • 1 pound fresh mozzarella cheese
  • 3 medium tomatoes
  • 1 cup fresh basil leaves
  • to taste balsamic vinegar (optional)

Instructions

  1. Whisk together mayonnaise, pesto, lemon juice, and garlic in a small bowl and season with salt and pepper.
  2. Brush the cut sides of ciabatta rolls with olive oil and toast them in a skillet until golden brown.
  3. Spread the pesto aioli on both sides of the toasted rolls.
  4. Add arugula to each sandwich, followed by mozzarella slices and then tomato slices.
  5. Top with fresh basil leaves, drizzle with balsamic if desired, and sprinkle with salt and pepper.
