Instructions
- Make arugula pesto if using.
- Slice the baguette in half lengthwise, leaving one side intact, and toast it slightly if desired.
- Mix mayo and pesto together and spread on the insides of the baguette.
- Layer mozzarella and tomatoes, seasoning with salt and pepper.
- Add fresh basil and drizzle with olive oil and balsamic.
- Close the baguette and cut into 5-6 pieces.
