Caprese Salad

Ingredients

The salad

  • 3 medium tomatoes, cut into 1/3-inch slices
  • 16 oz. fresh mozzarella, cut into 1/3-inch slices
  • ½ cup fresh basil leaves

The dressing

  • ½ cup balsamic vinegar
  • tsp honey (optional)
  • ¼ cup extra virgin olive oil
  • to taste salt
  • to taste freshly ground black pepper

Instructions

  1. Whisk together balsamic vinegar and honey in a small saucepan and simmer until thickened.
  2. Let the balsamic reduction cool to room temperature.
  3. Layer tomato slices, mozzarella, and basil on a serving platter.
  4. Drizzle with olive oil and balsamic reduction, then season with salt and pepper.
  5. Serve immediately.
