Ingredients

The salad

  • 2 hearts romaine, washed and chopped
  • 1 small tomato, diced
  • ½ cup canned corn kernels, drained
  • ½ cup canned black beans, drained and rinsed
  • 2 tablespoons red onion, diced
  • ½ recipe crispy baked tofu

The dressing

  • 2 tablespoons BBQ sauce
  • 2 tablespoons ranch dressing

Instructions

  1. Prepare the crispy baked tofu according to the recipe.
  2. Toss the tofu in BBQ sauce to coat.
  3. Chop the romaine and place it in a large serving bowl.
  4. Top the romaine with tomatoes, corn, black beans, red onion, and BBQ tofu.
  5. Drizzle with ranch dressing and enjoy!
