Quick Chicken Tikka Masala

The sauce

crushed tomatoes

plain Greek yogurt

Instructions
- Pulse ginger and garlic in a food processor until finely chopped, then add onion and pulse until finely chopped.
- Toss chicken with 1 ½ tsp garam masala and 1 tsp salt, then heat 1 Tbsp olive oil in a skillet over medium-high heat.
- Add chicken to the skillet and cook, turning halfway through, for about 6-7 minutes, then transfer to a plate.
- In the same skillet, heat the remaining olive oil and sauté the onion mixture until softened, about 3 minutes.
- Add tomato paste, remaining garam masala, paprika, and cayenne, cooking for 30 seconds while stirring constantly.
- Add crushed tomatoes, season with salt, and cook until heated through, about 2 minutes.
- Return chicken to the pan and cook for an additional minute, then remove from heat and stir in Greek yogurt and lemon juice.
- Serve warm over basmati rice topped with cilantro.
