Quick Chicken Tikka Masala

Ingredients

The chicken and spices

  • 1 1 ½ inch knob ginger, peeled
  • 4 cloves garlic, peeled
  • ½ large yellow onion, peeled
  • 1 ½ lbs boneless skinless chicken breasts, diced into 1-inch cubes
  • 1 ½ Tbsp garam masala spice blend
  • 1 tsp salt
  • 2 Tbsp olive oil
  • 1 Tbsp tomato paste
  • 1 ½ tsp ground paprika
  • ¼ tsp cayenne pepper

The sauce

  • 1 28 oz can crushed tomatoes
  • ½ cup plain Greek yogurt
  • 1 Tbsp fresh lemon juice
  • ¼ cup cilantro leaves

Instructions

  1. Pulse ginger and garlic in a food processor until finely chopped, then add onion and pulse until finely chopped.
  2. Toss chicken with 1 ½ tsp garam masala and 1 tsp salt, then heat 1 Tbsp olive oil in a skillet over medium-high heat.
  3. Add chicken to the skillet and cook, turning halfway through, for about 6-7 minutes, then transfer to a plate.
  4. In the same skillet, heat the remaining olive oil and sauté the onion mixture until softened, about 3 minutes.
  5. Add tomato paste, remaining garam masala, paprika, and cayenne, cooking for 30 seconds while stirring constantly.
  6. Add crushed tomatoes, season with salt, and cook until heated through, about 2 minutes.
  7. Return chicken to the pan and cook for an additional minute, then remove from heat and stir in Greek yogurt and lemon juice.
  8. Serve warm over basmati rice topped with cilantro.
