Ingredients

The pasta

  • 12 ounces penne pasta

The sauce

  • 1 tablespoon olive oil
  • 1 ½ pounds shrimp, peeled, deveined, and tails removed
  • ½ cup heavy cream
  • ½ cup chicken broth
  • ½ cup chopped sun-dried tomatoes
  • ½ cup basil pesto
  • to taste salt and pepper
  • for serving freshly grated Parmesan cheese

Instructions

  1. 1. Cook the pasta in lightly salted boiling water until al dente, then drain and set aside.
  2. 2. In a deep skillet, heat olive oil over medium heat until hot.
  3. 3. Add the shrimp, season with salt and pepper, and cook until they start to turn pink.
  4. 4. Add cream, broth, and sun-dried tomatoes, then simmer until the shrimp are fully cooked.
  5. 5. Stir in the cooked pasta and pesto, tossing until combined.
  6. 6. Season to taste with salt and pepper and serve immediately with Parmesan cheese.
