Chicken Rollatini with Prosciutto and Cheese

Instructions
- Wash and dry the chicken cutlets.
- Combine breadcrumbs and grated cheese in one bowl.
- In another bowl, mix olive oil, lemon juice, and pepper.
- Preheat the oven to 450°F.
- Lightly spray a baking dish with non-stick spray.
- Dip each chicken cutlet in the lemon-oil mixture, then coat with breadcrumbs.
- On a cutting board, place each cutlet and add prosciutto, cheese, and red onion on one side.
- Roll the cutlet and place seam side down in the baking dish.
- Repeat with remaining cutlets, top with remaining crumbs, and spray lightly with oil.
- Bake for 25 to 30 minutes and serve immediately.
