Chicken Rollatini with Prosciutto and Cheese

Ingredients

  • 8 pieces thin chicken cutlets
  • 4 slices thin lean prosciutto
  • 4 slices Sargento reduced fat provolone or mozzarella
  • ½ cup whole wheat Italian seasoned breadcrumbs
  • ¼ cup Romano cheese or parmesan
  • 1 whole lemon (juice of)
  • 1 tbsp olive oil
  • to taste fresh pepper
  • ¼ whole red onion (sliced)
  • as needed olive oil non-stick spray

Instructions

  1. Wash and dry the chicken cutlets.
  2. Combine breadcrumbs and grated cheese in one bowl.
  3. In another bowl, mix olive oil, lemon juice, and pepper.
  4. Preheat the oven to 450°F.
  5. Lightly spray a baking dish with non-stick spray.
  6. Dip each chicken cutlet in the lemon-oil mixture, then coat with breadcrumbs.
  7. On a cutting board, place each cutlet and add prosciutto, cheese, and red onion on one side.
  8. Roll the cutlet and place seam side down in the baking dish.
  9. Repeat with remaining cutlets, top with remaining crumbs, and spray lightly with oil.
  10. Bake for 25 to 30 minutes and serve immediately.
