Instructions
- Preheat the oven to 350°F.
- Mix together ricotta cheese and garlic bread seasoning; set aside.
- Line a baking sheet with parchment paper; set aside.
- Pound each chicken breast to about ¼ inch thick, then cut in half.
- Place spinach leaves on each chicken piece, sprinkle with mozzarella, and spread 2 tablespoons of the ricotta mixture, leaving a margin.
- Roll up each chicken breast and secure with toothpicks.
- Roll each stuffed chicken in melted butter, then in bread crumbs, and place on the baking sheet.
- Bake for 35-40 minutes or until cooked through, optionally broiling for 1-2 minutes to brown the tops.
