Pizza Chicken Roulades

Ingredients

The chicken

  • 2 pieces uncooked boneless skinless chicken breasts (6 oz each)

The filling

  • 4 teaspoons pizza sauce
  • ¼ teaspoon Italian seasoning
  • 6 slices turkey pepperoni
  • 2 tablespoons 2% shredded Mozzarella

The coating

  • 1 tablespoon flour
  • 1 piece egg white, beaten
  • 3 tablespoons seasoned breadcrumbs
  • 1 teaspoon grated Parmesan cheese

Instructions

  1. Preheat the oven to 400°F and prepare a baking sheet with parchment paper.
  2. Pound the chicken breasts to ¼ inch thickness and spread 2 teaspoons of pizza sauce on each.
  3. Sprinkle half the Italian seasoning, three pepperoni slices, and a tablespoon of cheese on each breast.
  4. Roll each breast tightly from the short side and seal with toothpicks.
  5. Coat the rolled chicken in flour by placing it in a Ziploc bag and shaking.
  6. Dip each roll in beaten egg white, then coat with breadcrumbs mixed with Parmesan cheese.
  7. Place the rolls seam side down on the baking sheet and bake for 30-35 minutes.
  8. Remove toothpicks before serving.
