Buffalo Chicken Roulades

Ingredients

The chicken

  • 2 pieces boneless skinless chicken breasts (6 oz each)
  • to taste Salt
  • to taste Black pepper

The filling and coating

  • 2 tablespoons crumbled blue cheese
  • 2 tablespoons Frank’s Red Hot or similar hot sauce
  • 1 tablespoon fat free sour cream
  • ¾ cup corn flakes cereal (crushed)

Instructions

  1. Preheat the oven to 400°F and prepare a baking dish with cooking spray.
  2. Pound the chicken breasts to a ¼ inch thickness and season with salt and pepper.
  3. Sprinkle blue cheese on each breast and roll them up, securing with toothpicks.
  4. Mix hot sauce and sour cream in a bowl.
  5. Brush the chicken rolls with the hot sauce mixture and coat with crushed corn flakes.
  6. Place the rolls seam side down in the baking dish and bake for 30-35 minutes.
  7. Remove toothpicks before serving.
