Instructions
- Mix feta, oregano, garlic, and lemon zest in a bowl and set aside.
- Butterfly the chicken breasts and pound them to ¼" thickness.
- Season the chicken with salt and pepper, then spread the feta mixture evenly and roll up the breasts, securing with twine.
- Heat olive oil in a skillet and sear the chicken rolls until golden brown.
- Add wine and chicken broth to the skillet, cooking until reduced and chicken is fully cooked.
- Remove chicken and whisk in lemon juice and butter to create the sauce.
- Slice the roulades and serve with the sauce poured on top.
