Chicken Roulade

Ingredients

Filling

  • 6 oz. feta cheese
  • 2 Tbsp. fresh oregano
  • 4 cloves garlic
  • 1 small lemon zest
  • ¼ cup fresh lemon juice

Chicken

  • 4 (5–6-oz.) skinless boneless chicken breasts
  • tsp. kosher salt
  • to taste freshly ground black pepper

Cooking

  • 2 Tbsp. extra-virgin olive oil
  • 1 cup dry white wine
  • 1 cup low-sodium chicken broth
  • 2 Tbsp. cold unsalted butter

Instructions

  1. Mix feta, oregano, garlic, and lemon zest in a bowl and set aside.
  2. Butterfly the chicken breasts and pound them to ¼" thickness.
  3. Season the chicken with salt and pepper, then spread the feta mixture evenly and roll up the breasts, securing with twine.
  4. Heat olive oil in a skillet and sear the chicken rolls until golden brown.
  5. Add wine and chicken broth to the skillet, cooking until reduced and chicken is fully cooked.
  6. Remove chicken and whisk in lemon juice and butter to create the sauce.
  7. Slice the roulades and serve with the sauce poured on top.
