Baked Mozzarella Chicken Rolls

Ingredients

  • 2 lbs boneless skinless chicken breasts
  • 1 cup whole wheat Italian style bread crumbs
  • 6 tablespoons grated Parmesan cheese
  • 5 ounces fresh baby spinach
  • 1 clove minced garlic
  • 1 drizzle olive oil
  • ½ cup part-skim ricotta cheese
  • cup beaten egg whites
  • 3 ounces fresh mozzarella cheese
  • 1 cup marinara sauce
  • to taste fresh basil for topping

Instructions

  1. Prepare the chicken by cutting it into 8 pieces and pounding them thin.
  2. Mix breadcrumbs with 2 tablespoons of Parmesan cheese in a shallow bowl.
  3. Chop and sauté the spinach with minced garlic and olive oil until wilted, then mix with ricotta, remaining Parmesan, and some egg whites.
  4. Preheat the oven to 450°F and oil a baking dish.
  5. Roll each chicken piece with a spoonful of the filling, dip in egg whites, and coat with breadcrumbs.
  6. Place the rolls seam side down in the baking dish and bake for 25 minutes.
  7. After baking, cover with marinara sauce and mozzarella, then bake for an additional 3-5 minutes until the cheese melts.
  8. Top with fresh basil before serving.
