Baked Mozzarella Chicken Rolls

Instructions
- Prepare the chicken by cutting it into 8 pieces and pounding them thin.
- Mix breadcrumbs with 2 tablespoons of Parmesan cheese in a shallow bowl.
- Chop and sauté the spinach with minced garlic and olive oil until wilted, then mix with ricotta, remaining Parmesan, and some egg whites.
- Preheat the oven to 450°F and oil a baking dish.
- Roll each chicken piece with a spoonful of the filling, dip in egg whites, and coat with breadcrumbs.
- Place the rolls seam side down in the baking dish and bake for 25 minutes.
- After baking, cover with marinara sauce and mozzarella, then bake for an additional 3-5 minutes until the cheese melts.
- Top with fresh basil before serving.
