Ultimate Red Velvet Cake

Ingredients

The cake

  • 2 whole eggs
  • 1 ½ cups canola oil
  • 1 cup buttermilk
  • 1 tbsp apple cider vinegar
  • 1 tsp vanilla extract
  • 2 oz red food coloring
  • 2 ½ cups all-purpose flour
  • 2 cups sugar
  • 1 tbsp unsweetened cocoa
  • 1 tsp baking soda
  • 1 tsp salt

The frosting

  • 2 sticks butter
  • 2 packages cream cheese
  • 1 tsp vanilla extract
  • 4-6 cups powdered sugar

Instructions

  1. Preheat the oven to 350°F and prepare two 8-inch cake pans with butter and flour.
  2. In a medium bowl, lightly stir the eggs and then whisk in the remaining liquid ingredients.
  3. In a stand mixer, combine all the dry ingredients and mix well before adding the wet ingredients.
  4. Mix the batter on medium-high until fully combined, then divide it equally into the prepared pans.
  5. Bake for about 30 minutes or until a toothpick comes out clean.
  6. Cool the cakes in the pans before transferring them to wire racks.
  7. While cooling, prepare the frosting by creaming together the butter and cream cheese, then adding vanilla and powdered sugar to your desired consistency.
  8. Once the cakes are cool, frost them, starting with a crumb coat and then decorating with roses as desired.
