Cake Ingredients

  • cups cake flour
  • 1 cup buttermilk
  • 1 teaspoon vanilla extract
  • 1 teaspoon red (no-taste) icing color

Frosting Ingredients

  • 8 oz cream cheese, room temperature
  • 1 cup unsalted butter, room temperature
  • 3 cups powdered sugar
  • 1 teaspoon clear vanilla extract

Instructions

  1. Preheat the oven to 350°F (176°C) and coat three 8-inch pans with nonstick spray.
  2. In a stand mixer, beat the sugar and butter until light and fluffy.
  3. Add the cocoa, salt, baking soda, and eggs one at a time, mixing well.
  4. Alternate adding the cake flour and buttermilk in thirds, mixing until combined.
  5. Mix in the vanilla extract and red icing color.
  6. Divide the batter among the three pans and bake for 25 minutes.
  7. Let the cakes cool in the pans before transferring to the freezer for 30 minutes.
  8. For the frosting, beat all frosting ingredients in a stand mixer until smooth.
  9. Remove the cakes from the freezer, level the tops, and frost with the cream cheese frosting.
