Braised Lamb Shanks

Ingredients

The lamb

  • 3 shanks lamb shanks
  • pounds lamb shanks

The seasonings

  • 1 tablespoon kosher salt
  • 2 teaspoons garlic powder
  • 2 teaspoons ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon ground mustard
  • ½ teaspoon freshly cracked black pepper

The sauce

  • 2 tablespoons neutral oil
  • 1 15-ounce can whole or diced tomatoes
  • 1 cup water
  • 1 chipotle in adobo
  • 2 cloves garlic
  • ¼ white onion sliced
  • 4 carrots trimmed, peeled and roughly chopped

For garnish

  • 1 tablespoon cilantro, minced
  • 1 radish thinly sliced
  • 1 lime cut into wedges
  • more diced white onion, as garnish

Instructions

  1. Prepare the lamb shanks by seasoning them with a spice mixture and letting them come to room temperature.
  2. Sear the lamb shanks in a hot Dutch oven until browned on both sides.
  3. Blend the chipotle in adobo, tomato sauce, water, and salt until pureed.
  4. Pour the sauce over the shanks in the Dutch oven and cover with a lid.
  5. Transfer the pot to the oven and braise for 2½ to 3 hours until tender.
  6. For the Instant Pot method, add garlic, sliced onion, carrots, and sauce to the pot, then add the lamb shanks.
  7. Set the Instant Pot to high pressure for 45 minutes, then allow it to naturally release for 15 minutes.
  8. Serve the lamb shanks with sauce and garnish with cilantro, radishes, onion, and lime wedges.
