Spiced Apple Braised Lamb Shanks

Instructions
- Preheat the oven to 300°F.
- Pat the lamb shanks dry and season with salt and pepper.
- Melt coconut oil in a heavy skillet over high heat.
- Sear the lamb shanks until golden brown, about 3 minutes per side, then transfer to a Dutch oven.
- Lower the heat to medium, add more fat if needed, and cook the apples, garlic, salt, and pepper until the apples are fragrant and golden.
- Add the apple mixture to the Dutch oven with the lamb.
- Mix chicken stock, mustard, vinegar, chai spice, and sage, then pour over the meat and apples.
- Cover and bake for 3 to 3½ hours, until the meat is tender and easily detaches from the bones.
- Serve hot.
