Spiced Apple Braised Lamb Shanks

Ingredients

The lamb

  • 4 pieces lamb shanks
  • 2 tbsp coconut oil

The vegetables

  • 2 pieces red apples, cored and diced
  • 8 cloves garlic, peeled

The seasonings

  • 1 tsp black pepper
  • ½ tsp Himalayan salt
  • 2 tbsp fresh sage, chopped
  • 1 tbsp Dijon mustard
  • 1 tbsp balsamic vinegar
  • 1 tbsp chai spice

The liquids

  • 1 cup light chicken stock

Instructions

  1. Preheat the oven to 300°F.
  2. Pat the lamb shanks dry and season with salt and pepper.
  3. Melt coconut oil in a heavy skillet over high heat.
  4. Sear the lamb shanks until golden brown, about 3 minutes per side, then transfer to a Dutch oven.
  5. Lower the heat to medium, add more fat if needed, and cook the apples, garlic, salt, and pepper until the apples are fragrant and golden.
  6. Add the apple mixture to the Dutch oven with the lamb.
  7. Mix chicken stock, mustard, vinegar, chai spice, and sage, then pour over the meat and apples.
  8. Cover and bake for 3 to 3½ hours, until the meat is tender and easily detaches from the bones.
  9. Serve hot.
