Ingredients

Dressing

  • cup tahini
  • cup water
  • ¼ cup lemon juice
  • 2 cloves garlic, minced
  • ½ tsp ground cumin
  • ¼ tsp cayenne pepper
  • ½ tsp salt

Spiced Chickpeas

  • 1 15 oz can chickpeas
  • 1 Tbsp olive oil
  • ½ tsp smoked paprika
  • ¼ tsp garlic powder
  • tsp cayenne pepper (optional)
  • to taste freshly cracked black pepper
  • to taste salt

Salad

  • 3 cups cooked farro (or other grain)
  • 2 medium Roma tomatoes
  • 1 medium cucumber
  • ¼ bunch fresh parsley

Instructions

  1. Prepare the dressing by blending tahini, water, lemon juice, minced garlic, cumin, cayenne, and salt until smooth. Set aside.
  2. Rinse and drain the chickpeas, then heat olive oil in a skillet over medium heat. Add the chickpeas and season with smoked paprika, garlic powder, cayenne (if using), and black pepper. Sauté for about five minutes until slightly browned.
  3. Chop the tomatoes, cucumber, and parsley.
  4. Assemble the salad by placing cooked farro in bowls, topping with chopped tomato, cucumber, spiced chickpeas, and parsley. Drizzle with the dressing before serving.
