Mediterranean Farro Salad

Ingredients

The salad

  • 1 ¼ cups farro
  • 2 pieces bell peppers, diced
  • 1 small red onion, diced
  • 1 cup fresh parsley, chopped
  • ½ cup kalamata olives, chopped
  • ¾ cup sun-dried tomatoes, julienne-style
  • 3.5 oz feta cheese
  • 1 can (15 oz) chickpeas, drained and rinsed

The dressing

  • 1 batch Italian dressing

Instructions

  1. Cook the farro according to package directions and cool it in the freezer for 20 minutes.
  2. While the farro is cooling, prepare the dressing and chop the vegetables.
  3. In a large mixing bowl, combine the bell peppers, parsley, onion, olives, sun-dried tomatoes, and chickpeas.
  4. Crumble the feta into the bowl, then add the cooled farro and dressing.
  5. Toss everything together and serve chilled.
