Mediterranean Farro Salad

The dressing
Instructions
- Cook the farro according to package directions and cool it in the freezer for 20 minutes.
- While the farro is cooling, prepare the dressing and chop the vegetables.
- In a large mixing bowl, combine the bell peppers, parsley, onion, olives, sun-dried tomatoes, and chickpeas.
- Crumble the feta into the bowl, then add the cooled farro and dressing.
- Toss everything together and serve chilled.
