Vegan Mushroom Meatballs

Ingredients

The meatballs

  • 1 Tablespoon ground flax meal
  • 3 Tablespoons water
  • 1 Tablespoon light olive oil or vegan butter
  • cup chopped red onion or 1 large shallot
  • 8 ounces cremini mushrooms, sliced
  • to taste kosher salt and ground black pepper
  • 1 cup roasted nuts (almond, pistachio, or toasted walnut halves)
  • cup gluten-free flour or oat flour
  • 1 ½ teaspoons minced garlic
  • 1 Tablespoon gluten-free tamari soy sauce
  • 2–3 Tablespoons nutritional yeast
  • 3 Tablespoons chopped fresh basil
  • ½ teaspoon paprika
  • 1 teaspoon dried parsley
  • ½ teaspoon onion salt
  • 2 cups red pepper sauce (or sauce of choice)
  • to garnish fresh chopped basil and cracked pepper

The red pepper sauce

  • 1 jar jarred roasted red peppers
  • 1 cup smoked nuts (almonds and/or cashews)
  • 1 plum plum tomato
  • 2 Tablespoons red wine vinegar
  • 1 cup non-dairy unsweetened creamer/milk
  • 1 clove garlic
  • to taste spices (paprika, crushed red pepper, salt, and pepper)

Instructions

  1. Preheat the oven to 400°F and line a baking sheet with parchment paper.
  2. In a small bowl, whisk together the ground flax and water, and let it sit until it thickens.
  3. Heat oil in a frying pan over medium heat and sauté the onions until softened, then add the mushrooms and cook until lightly browned.
  4. Let the mushroom mixture cool for 5-10 minutes.
  5. Blend the roasted nuts in a food processor until they form a fine meal, then mix with flour in a bowl.
  6. Blend the cooled mushroom mixture with garlic until it forms a paste.
  7. Combine the mushroom paste with the flour mixture, adding tamari, nutritional yeast, basil, paprika, parsley, and onion salt.
  8. Mix in the flax egg, and if the mixture is too soft, chill in the fridge for 30 minutes.
  9. Shape the mixture into meatballs and place them on the baking sheet.
  10. Bake for 20 minutes, then flip the meatballs and bake for an additional 10-15 minutes.
  11. While the meatballs bake, heat the red pepper sauce ingredients in a saucepan until warm.
  12. Combine the baked meatballs with the warm sauce and serve garnished with basil and cracked pepper.
