Garlic Bread

Instructions
- Prepare the cashew vegan parmesan by blending cashews, nutritional yeast, salt, lemon zest, and garlic powder until finely ground.
- Preheat the oven to 400°F and prepare a baking sheet with parchment paper.
- Mix ground chia/flax seeds with water and let it gel.
- Blend toasted pecans and oats in a food processor until coarse, then transfer to a bowl.
- Sauté onions in olive oil until soft, then add mushrooms and garlic, cooking until tender.
- Combine the sautéed mixture with the pecan and oat mixture, adding nutritional yeast, balsamic vinegar, tamari, spices, and chia gel. Mix well.
- Form the mixture into 8 meatballs and place them on the baking sheet, brushing with olive oil.
- Bake for 25 minutes until firm and browned.
- While baking, prepare garlic bread by heating olive oil and cooking garlic with salt and chili flakes.
- Brush the ciabatta with garlic oil and broil until toasted.
- Serve meatballs in warm marinara with garlic bread and cashew parmesan on the side.
