Ingredients

Cashew Vegan Parmesan

  • ¾ cup raw cashews
  • ¼ cup nutritional yeast
  • 1 teaspoon sea salt
  • 1 teaspoon lemon zest (optional)
  • ½ teaspoon garlic powder

Mushroom Meatballs

  • 1 tablespoon ground chia or flax seeds
  • 3 tablespoons water
  • 1 cup pecan halves, toasted
  • ¾ cup rolled oats
  • 2 teaspoons olive oil, plus extra
  • 1 small yellow onion, small dice (about ¾ cup diced onion)
  • 8 oz button or cremini mushrooms, stems removed and caps sliced
  • 3 cloves garlic, minced
  • to taste sea salt and ground black pepper
  • 2 tablespoons nutritional yeast
  • 2 teaspoons balsamic vinegar
  • 1 teaspoon gluten-free tamari soy sauce
  • ½ teaspoon red pepper flakes
  • ½ teaspoon onion powder
  • ¼ teaspoon liquid smoke
  • cup flat leaf parsley leaves, finely chopped
  • to taste warm marinara, for serving

Garlic Bread

  • 1 ciabatta baguette
  • ¼ cup olive oil
  • 3 cloves garlic, finely minced
  • to taste sea salt
  • to taste chili flakes (optional)
  • ¼ cup flat leaf parsley leaves, finely chopped

Instructions

  1. Prepare the cashew vegan parmesan by blending cashews, nutritional yeast, salt, lemon zest, and garlic powder until finely ground.
  2. Preheat the oven to 400°F and prepare a baking sheet with parchment paper.
  3. Mix ground chia/flax seeds with water and let it gel.
  4. Blend toasted pecans and oats in a food processor until coarse, then transfer to a bowl.
  5. Sauté onions in olive oil until soft, then add mushrooms and garlic, cooking until tender.
  6. Combine the sautéed mixture with the pecan and oat mixture, adding nutritional yeast, balsamic vinegar, tamari, spices, and chia gel. Mix well.
  7. Form the mixture into 8 meatballs and place them on the baking sheet, brushing with olive oil.
  8. Bake for 25 minutes until firm and browned.
  9. While baking, prepare garlic bread by heating olive oil and cooking garlic with salt and chili flakes.
  10. Brush the ciabatta with garlic oil and broil until toasted.
  11. Serve meatballs in warm marinara with garlic bread and cashew parmesan on the side.
