Ingredients

The filling

  • 2 lbs strawberries
  • cup sugar
  • 2 tbsp corn starch
  • 2 tbsp water
  • ½ lemon juice
  • 1 tsp vanilla

The crumble

  • cup brown sugar
  • ¾ cup all-purpose flour
  • ¾ cup cooking or rolled oats
  • ½ tsp baking powder
  • 1 tsp cinnamon
  • ¼ tsp salt
  • 6 tbsp vegan firm unsalted butter

Instructions

  1. Preheat the oven to 350°F and prepare a 10-inch baking dish.
  2. Remove the tops of the strawberries and slice them into quarters or halves.
  3. Place the strawberries in the baking dish.
  4. In a small bowl, mix the sugar and cornstarch together.
  5. In another bowl, combine the water, lemon juice, and vanilla.
  6. Pour the wet and dry mixtures over the strawberries and mix well.
  7. Spread the strawberries evenly in the dish.
  8. For the crumble, combine all crumble ingredients in a medium bowl.
  9. Use a hand mixer to mix until the butter resembles peas or coarse sand.
  10. Spread the crumble mixture evenly over the strawberries, leaving a ½-inch border around the edges.
  11. Bake for 40 minutes until the crumble is lightly golden.
  12. Let it cool for 10 minutes before serving.
  13. Serve warm with vanilla ice cream.
