Spanakopita Strudels

Ingredients

The filling

  • 10 oz baby spinach
  • 8 oz cottage cheese
  • 12 oz feta cheese
  • 5 units eggs

The pastry

  • 1 box fillo dough
  • 1 ½ sticks butter

Instructions

  1. Chop the spinach in a food processor and place in a large bowl.
  2. Add cottage cheese, feta cheese, and beaten eggs to the bowl and mix well.
  3. Prepare your work station with a cutting board, measuring cup, and butter.
  4. Unroll the fillo dough and keep it covered to prevent drying out.
  5. Preheat the oven to 350ºF.
  6. Layer fillo sheets on the cutting board, spoon melted butter over each layer, and repeat with additional layers.
  7. Scoop out filling and place it on the fillo, then fold and seal into parcels.
  8. Place the parcels seam side down on a parchment-lined baking sheet and brush the tops with butter.
  9. Bake for 30 to 45 minutes until golden brown.
