Instructions
- Chop the spinach in a food processor and place in a large bowl.
- Add cottage cheese, feta cheese, and beaten eggs to the bowl and mix well.
- Prepare your work station with a cutting board, measuring cup, and butter.
- Unroll the fillo dough and keep it covered to prevent drying out.
- Preheat the oven to 350ºF.
- Layer fillo sheets on the cutting board, spoon melted butter over each layer, and repeat with additional layers.
- Scoop out filling and place it on the fillo, then fold and seal into parcels.
- Place the parcels seam side down on a parchment-lined baking sheet and brush the tops with butter.
- Bake for 30 to 45 minutes until golden brown.
