Kale and Sweet Potato Sauté

Ingredients

The sauté

  • 2 cups cubed and peeled sweet potatoes
  • 1 Tbsp cooking oil
  • ½ cup thinly sliced red onion
  • 3 cloves garlic
  • 4 cups kale
  • to taste sea salt and pepper

Optional toppings

  • avocado
  • fried eggs
  • lemon wedges

Instructions

  1. Heat oil in a large skillet over medium-high heat.
  2. Add sweet potato and onion, sauté for 5-8 minutes until softened.
  3. Add garlic and cook for an additional 30 seconds until fragrant.
  4. Add 2 Tbsp. water, cover, and cook for 3-4 minutes until potatoes are nearly done.
  5. Add kale, toss well, and cook for 3 minutes until wilted and tender.
  6. Remove from heat, season with salt and pepper, and serve with optional toppings.
