Kale and Sweet Potato Sauté

Instructions
- Heat oil in a large skillet over medium-high heat.
- Add sweet potato and onion, sauté for 5-8 minutes until softened.
- Add garlic and cook for an additional 30 seconds until fragrant.
- Add 2 Tbsp. water, cover, and cook for 3-4 minutes until potatoes are nearly done.
- Add kale, toss well, and cook for 3 minutes until wilted and tender.
- Remove from heat, season with salt and pepper, and serve with optional toppings.
