Baked Sweet Potato and Kale

Ingredients

The main ingredients

  • 4 medium sweet potatoes, peeled and chopped into 1-inch chunks
  • 3 cups chopped kale
  • 1 medium onion, chopped

The seasonings

  • 1 teaspoon ground cinnamon
  • 1 teaspoon dried thyme
  • 1 teaspoon sea salt
  • ½ teaspoon freshly-ground black pepper

The cooking oil

  • 2 tablespoons coconut oil, melted

The cooking spray

  • 1 serving nonstick cooking spray

Instructions

  1. Preheat the oven to 375ºF and spray a casserole dish with nonstick cooking spray.
  2. In a large mixing bowl, combine the sweet potatoes, kale, onion, cinnamon, thyme, salt, and pepper.
  3. Pour the melted coconut oil over the ingredients and stir to combine.
  4. Pour the mixture into the casserole dish and bake for 45-50 minutes until the sweet potatoes are fork-tender.
  5. Serve warm.
