Sweet Potato and Kale Curry

Instructions
- Start cooking the rice if you are making it.
- Prepare the sweet potato, onion, and kale.
- Heat coconut oil in a large pan over medium heat.
- Add onion and stir until fragrant.
- Add garlic, sweet potatoes, and spices, and stir for a minute or two.
- Add garbanzo beans, tomatoes, coconut milk, and veggie broth, and stir well.
- Cover, reduce heat to low, and cook for 25 minutes or until sweet potatoes are soft.
- Add kale to the dish once cooked.
- Plate your food and enjoy!
