Sweet Potato and Kale Curry

Ingredients

The curry

  • 1 large sweet potato, diced
  • 1 large red onion, diced
  • 1 can garbanzo beans, drained
  • ½ cup coconut milk (full fat, white part only)
  • 1 can diced tomatoes (15/16 oz)
  • 2 tbsp coconut oil
  • ½ cup vegetable broth
  • 1 cup finely chopped kale
  • 3 cloves garlic
  • 2 tsp cumin
  • 2 tsp turmeric
  • ½ tsp cayenne pepper
  • 1 tsp salt
  • to taste pepper

To serve

  • to taste white basmati rice

Instructions

  1. Start cooking the rice if you are making it.
  2. Prepare the sweet potato, onion, and kale.
  3. Heat coconut oil in a large pan over medium heat.
  4. Add onion and stir until fragrant.
  5. Add garlic, sweet potatoes, and spices, and stir for a minute or two.
  6. Add garbanzo beans, tomatoes, coconut milk, and veggie broth, and stir well.
  7. Cover, reduce heat to low, and cook for 25 minutes or until sweet potatoes are soft.
  8. Add kale to the dish once cooked.
  9. Plate your food and enjoy!
