Sweet Potato Curry

Instructions
- Heat olive oil in a large pot over medium heat and sauté the onion until softened.
- Add turmeric, curry powder, garlic, and ginger, and stir until fragrant.
- Add broth or water, lentils, sweet potatoes, salt, and pepper. Bring to a boil, then lower heat and cover.
- Cook until lentils and sweet potatoes are tender.
- Stir in coconut milk and cilantro, adjusting seasoning to taste.
- Serve warm over cooked rice or quinoa, optionally with lime wedges.
