Curry Roasted Carrots with Peanut Sauce

Instructions
- Preheat the oven to 400°F (204°C).
- Toss the carrots with oil, salt, pepper, and curry powder on a baking sheet.
- Roast the carrots for 20-25 minutes until tender and brown, tossing once halfway through.
- Prepare the peanut sauce while the carrots are roasting.
- Serve the roasted carrots over 3/4 cup of millet and top with peanut sauce and any optional toppings.
