Curry Roasted Carrots with Peanut Sauce

Ingredients

The carrots

  • 1 medium bundle carrots
  • 1-2 Tbsp melted coconut oil
  • 2 tsp curry powder
  • ¼ tsp sea salt
  • ¼ tsp black pepper

The peanut sauce and toppings

  • cups cooked millet
  • optional Sriracha
  • optional minced basil and/or cilantro
  • optional crushed peanuts
  • optional lime

Instructions

  1. Preheat the oven to 400°F (204°C).
  2. Toss the carrots with oil, salt, pepper, and curry powder on a baking sheet.
  3. Roast the carrots for 20-25 minutes until tender and brown, tossing once halfway through.
  4. Prepare the peanut sauce while the carrots are roasting.
  5. Serve the roasted carrots over 3/4 cup of millet and top with peanut sauce and any optional toppings.
