Ingredients

The slushies

  • 2 cups clementine slices, peeled and separated into slices
  • ¼ cup Aperol, plus more for garnish
  • 3 tablespoons simple syrup (agave recommended)
  • ½ cup champagne or prosecco, plus more for garnish
  • 2 cups ice

Agave Simple Syrup

  • ¼ cup agave syrup
  • ¼ cup water
  • 4-6 dashes orange bitters, or to taste

Instructions

  1. Freeze the clementines by laying them on a plate or small baking sheet and placing them in the freezer for at least 30 minutes.
  2. Prepare the simple syrup by whisking together agave syrup, water, and orange bitters in a saucepan. Bring to a boil, then simmer for 5-10 minutes until syrupy. Cool completely in the refrigerator.
  3. Once the clementines are frozen and the simple syrup is cooled, blend the clementines, Aperol, and simple syrup until smooth.
  4. Add ice and champagne to the blender and blend again until smooth and frothy.
  5. Pour the slushie into glasses and garnish with a splash of Aperol and a clementine slice. Serve immediately.
