Instructions
- Prepare the vegetables by coring and chopping the tomatoes, reserving some seeds for garnish.
- Chop and prepare the onion, cucumber, and bell pepper, dividing them between a blender and a serving bowl.
- Add basil, garlic, olive oil, vinegar, salt, and pepper to the blender with half of the tomatoes, onions, cucumbers, and bell peppers.
- Blend until smooth, then add the remaining chopped vegetables and blend briefly to achieve desired texture.
- Chill the soup for at least 2 hours, allowing flavors to develop.
- Before serving, adjust seasoning if necessary and garnish with reserved vegetables and basil.
