Ultimate Gazpacho

Ingredients

  • 2 ½ pounds ripe red tomatoes
  • ½ pound sweet yellow onion
  • ½ pound cucumber
  • 1 medium red bell pepper
  • ¼ cup fresh basil leaves
  • 1 large garlic clove
  • ¼ cup extra-virgin olive oil
  • 2 tablespoons sherry vinegar or red wine vinegar
  • ¾ teaspoon fine sea salt
  • to taste freshly ground black pepper

Instructions

  1. Prepare the vegetables by coring and chopping the tomatoes, reserving some seeds for garnish.
  2. Chop and prepare the onion, cucumber, and bell pepper, dividing them between a blender and a serving bowl.
  3. Add basil, garlic, olive oil, vinegar, salt, and pepper to the blender with half of the tomatoes, onions, cucumbers, and bell peppers.
  4. Blend until smooth, then add the remaining chopped vegetables and blend briefly to achieve desired texture.
  5. Chill the soup for at least 2 hours, allowing flavors to develop.
  6. Before serving, adjust seasoning if necessary and garnish with reserved vegetables and basil.
