Ingredients

The stew

  • 2 14-ounce cans Great Northern beans
  • 2 4-ounce cans diced mild green chiles
  • 1 cup salsa verde
  • cups vegetable broth
  • 1 lb. baby red potatoes
  • 1 medium yellow onion
  • 4 cloves garlic
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • ½ large lime juice
  • to taste fine salt and black pepper

Optional garnishes

  • to taste thinly sliced green onions
  • to taste fresh cilantro
  • to taste jalapeño slices
  • to taste diced or sliced avocado
  • to taste sour cream (omit for vegan)
  • to taste shredded white cheddar cheese (omit for vegan)
  • to taste lime wedges

Instructions

  1. Add the beans, green chiles, salsa verde, broth, potatoes, onion, garlic, cumin, and oregano to a slow cooker and stir to combine.
  2. Cover and cook on low for 8 hours or on high for 4-5 hours until the potatoes are tender.
  3. Stir in the lime juice and add more broth if a thinner consistency is desired.
  4. Serve with your favorite toppings.
