1 Pot Loubia Stew

Ingredients

  • 2 cans cannellini beans, rinsed and drained
  • 2 medium tomatoes, grated
  • 1 large onion, sliced
  • 200 ml vegetable stock
  • 100 g sundried tomato, roughly chopped
  • 120 g chopped kale
  • 3 tablespoons olive oil
  • 2 cloves garlic, peeled and crushed
  • 2 teaspoons turmeric
  • 2 teaspoons paprika
  • ½ teaspoon salt or more to taste
  • ½ teaspoon ground black pepper
  • 3 tablespoons chopped fresh parsley for garnish

Instructions

  1. Combine all ingredients in a large saucepan over medium-high heat.
  2. Bring to a boil, then reduce heat to low and cover.
  3. Simmer gently for 35 minutes, stirring occasionally.
  4. If the stew becomes too dry, add a couple of tablespoons of water.
  5. Serve warm with bread.
