Instructions
- Set the Instant Pot to sauté and add olive oil.
- Once hot, add onion, carrots, and celery, sautéing until slightly soft.
- If using, add smoked sausage and sauté until lightly browned.
- Stir in garlic, Italian seasoning, salt, black pepper, smoked paprika, and red pepper flakes, sautéing until fragrant.
- Add the dried bean mix and spinach or kale, then pour in stock and crushed tomatoes.
- Seal the Instant Pot and set to the bean/soup setting for 40 minutes with a 15-minute natural release.
- Release the steam and carefully remove the lid.
- Stir in lemon juice and adjust seasoning if necessary.
- Serve with crusty whole grain baguette.
