Ingredients

  • 2 cups rolled oats (ground into flour)
  • ½ cup coconut sugar
  • 1 tablespoon baking powder
  • 1 teaspoon nutmeg
  • 1 teaspoon cinnamon
  • 1 pinch salt
  • 1 cup mashed sweet potato
  • 1 cup milk of choice
  • 1 large egg or egg substitute
  • 1 teaspoon vanilla extract
  • 6 tablespoons almond butter

Instructions

  1. Preheat the oven to 350°F and prepare a muffin tin with liners.
  2. Blend all ingredients in a high-speed blender or food processor until smooth.
  3. Distribute the batter evenly among the muffin tin.
  4. Bake for 25-30 minutes until a toothpick comes out clean.
  5. Let the muffins cool in the pan for 10 minutes before transferring to a wire rack.
