Ingredients

  • 1 cup mashed sweet potato
  • ½ cup coconut oil
  • 2 units eggs
  • cup maple syrup
  • 1 tsp vanilla
  • 2 cups homemade oat flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 tsp cinnamon
  • 1 cup chocolate chips (optional)
  • 1 cup chopped pecans (optional)

Instructions

  1. Preheat the oven to 350°F and prepare a muffin tin with liners and nonstick spray.
  2. Make oat flour by grinding rolled oats in a blender and measure after grinding.
  3. In a large bowl, whisk together the mashed sweet potato, coconut oil, eggs, maple syrup, and vanilla until well combined.
  4. In a separate bowl, mix the oat flour, baking powder, baking soda, salt, and cinnamon.
  5. Combine the dry ingredients with the wet ingredients and stir until fully mixed.
  6. Pour the batter into the muffin tin and bake for about 22 minutes, or until a toothpick comes out clean.
