Instructions
- Preheat the oven to 350°F and prepare a muffin tin with liners and nonstick spray.
- Make oat flour by grinding rolled oats in a blender and measure after grinding.
- In a large bowl, whisk together the mashed sweet potato, coconut oil, eggs, maple syrup, and vanilla until well combined.
- In a separate bowl, mix the oat flour, baking powder, baking soda, salt, and cinnamon.
- Combine the dry ingredients with the wet ingredients and stir until fully mixed.
- Pour the batter into the muffin tin and bake for about 22 minutes, or until a toothpick comes out clean.
