Ingredients

The batter

  • 1 cup roasted sweet potato
  • ½ cup unsweetened applesauce
  • 2 large eggs
  • 3 tbsp avocado oil or melted coconut oil
  • 1 tsp vanilla extract
  • 1 ¼ cups packed almond flour
  • 1 ¼ cups certified gluten-free oat flour
  • 1 ½ tsp cinnamon
  • 1 tsp baking soda
  • ½ tsp baking powder
  • ½ tsp fine sea salt

Topping

  • ¼ cup finely chopped pecans or walnuts

Instructions

  1. Preheat the oven to 350°F and grease a muffin tin.
  2. In a large bowl, whisk together the sweet potato flesh, applesauce, eggs, oil, and vanilla.
  3. Add the almond flour, oat flour, baking powder, baking soda, salt, and cinnamon to the wet ingredients and mix until combined.
  4. Scoop ¼ cup of batter into each muffin tin and top with nuts.
  5. Bake for 26 minutes, then cool on a wire rack before enjoying.
