Healthy Sweet Potato Muffins

Instructions
- Preheat the oven to 350°F and grease a muffin tin.
- In a large bowl, whisk together the sweet potato flesh, applesauce, eggs, oil, and vanilla.
- Add the almond flour, oat flour, baking powder, baking soda, salt, and cinnamon to the wet ingredients and mix until combined.
- Scoop ¼ cup of batter into each muffin tin and top with nuts.
- Bake for 26 minutes, then cool on a wire rack before enjoying.
