Ingredients

The crust

  • 2 packages shortbread cookies
  • 2 tablespoons granulated sugar
  • teaspoon ground nutmeg
  • cup unsalted butter

The filling

  • 2 pounds fresh strawberries
  • ½ cup honey
  • ¼ cup water
  • ¼ cup granulated sugar
  • 3 tablespoons cornstarch
  • 1 teaspoon pure vanilla extract
  • 6-10 drops red food coloring

The whipped cream

  • 1 cup heavy whipping cream
  • 1 tablespoon powdered sugar
  • 1 teaspoon pure vanilla extract

Instructions

  1. Preheat the oven to 400°F.
  2. Process the crust ingredients until fine crumbs form.
  3. Combine the crumbs with melted butter and press into a pie dish.
  4. Bake the crust for 8 to 10 minutes until golden brown.
  5. Mash 1 ½ cups of strawberries and mix with honey and water.
  6. Combine sugar and cornstarch, then add to the strawberry mixture and boil until thickened.
  7. Stir in vanilla and food coloring, then fold in remaining strawberries.
  8. Pour filling into the cooled crust and let cool for 10 minutes.
  9. Refrigerate for at least 4 hours.
  10. Prepare whipped cream by beating the ingredients until soft peaks form.
  11. Spread whipped cream over the pie and serve.
