Vegetarian Stuffing with Wild Rice, Mushrooms and Walnuts

Ingredients

  • 1 cup wild rice blend
  • 2 tbsp olive oil
  • 2 shallots chopped
  • 3 cloves garlic, minced
  • 2 stalks celery, chopped
  • 1 tsp salt
  • ½ tsp ground pepper
  • ½ tsp dried oregano
  • 1 tsp dried thyme
  • 2 tbsp butter
  • 3 cups mushrooms, chopped
  • ¼ cup rose or white wine (optional)
  • 2 tbsp minced fresh sage
  • ½ cup chopped walnuts

Instructions

  1. Cook wild rice according to package directions and let it sit covered for 10-15 minutes before fluffing with a fork.
  2. In a large saucepan, heat olive oil over medium heat and sauté shallots, garlic, and celery for 5-7 minutes until softened.
  3. Add salt, pepper, dried thyme, and dried oregano, cooking for about a minute until fragrant.
  4. Stir in butter and mushrooms, cooking until mushrooms are done.
  5. Deglaze the pan with wine and cook until nearly evaporated.
  6. Mix in cooked rice, sage, and walnuts, cooking for about 2 minutes to blend flavors.
  7. Taste and adjust seasoning if necessary, then serve warm.
