Instructions
- Cook wild rice according to package directions and let it sit covered for 10-15 minutes before fluffing with a fork.
- In a large saucepan, heat olive oil over medium heat and sauté shallots, garlic, and celery for 5-7 minutes until softened.
- Add salt, pepper, dried thyme, and dried oregano, cooking for about a minute until fragrant.
- Stir in butter and mushrooms, cooking until mushrooms are done.
- Deglaze the pan with wine and cook until nearly evaporated.
- Mix in cooked rice, sage, and walnuts, cooking for about 2 minutes to blend flavors.
- Taste and adjust seasoning if necessary, then serve warm.
