Spinach Chana Dal

Ingredients

The dal

  • cups chana dal
  • ½ teaspoon turmeric
  • 1 teaspoon salt

The tadka

  • tablespoons ghee
  • ½ teaspoon mustard seeds
  • ½ teaspoon cumin
  • 1 large onion
  • 2-3 cloves garlic
  • 1-2 teaspoons ginger
  • 1 piece green chili
  • 5 ounces spinach

Instructions

  1. Soak the chana dal overnight and rinse thoroughly.
  2. In a pot, combine the dal with 5 cups of water and bring to a boil, skimming off any foam.
  3. Once boiling, stir in turmeric and partially cover, cooking for 75 minutes while stirring occasionally.
  4. In a frying pan, heat ghee and add mustard and cumin seeds, stirring for 30 seconds.
  5. Add chopped onion and sauté until browned, about 5-6 minutes.
  6. Mix in garlic, ginger, and green chili, cooking for another 1-2 minutes.
  7. Add spinach and ½ cup of water, bring to a boil, cover, and cook until spinach wilts, about 8-10 minutes.
  8. Combine the spinach mixture with the cooked dal, adjusting consistency and salt to taste.
