Instructions
- Soak the chana dal overnight and rinse thoroughly.
- In a pot, combine the dal with 5 cups of water and bring to a boil, skimming off any foam.
- Once boiling, stir in turmeric and partially cover, cooking for 75 minutes while stirring occasionally.
- In a frying pan, heat ghee and add mustard and cumin seeds, stirring for 30 seconds.
- Add chopped onion and sauté until browned, about 5-6 minutes.
- Mix in garlic, ginger, and green chili, cooking for another 1-2 minutes.
- Add spinach and ½ cup of water, bring to a boil, cover, and cook until spinach wilts, about 8-10 minutes.
- Combine the spinach mixture with the cooked dal, adjusting consistency and salt to taste.
