Ingredients

The base

  • 2 small onions
  • 3 cloves garlic
  • 1 inch ginger
  • 2 tablespoons olive oil

The spices

  • 1 stick cinnamon
  • 1 leaf bay
  • 4 pods cardamom
  • 2 whole cloves
  • 1 teaspoon turmeric
  • 1 tablespoon garam masala
  • ½ teaspoon chili powder
  • ½ teaspoon ground cumin
  • ½ teaspoon ground coriander
  • 1 tablespoon salt

The main ingredients

  • 14 ounces canned tomatoes
  • 18 ounces canned chickpeas
  • cups water

For garnish

  • to taste cilantro
  • to taste lemon juice

Instructions

  1. Blend the onion, garlic, and ginger with two tablespoons of water to make a smooth paste.
  2. Heat oil in a large pot and add the cinnamon, bay leaf, cardamom, and cloves until sizzling. Then add the onion paste and sauté for five minutes.
  3. Add the tomatoes and cook for another five minutes, stirring occasionally. Then mix in the spices.
  4. Add the chickpeas and water, cover the pot, and simmer for 15 minutes, stirring occasionally.
