Ingredients

The main ingredients

  • 4 cups chick peas, cooked
  • 1 tbsp oil
  • 1 small onion, chopped
  • ½ cup canned ground or crushed tomatoes, unsalted
  • 1½-2 tbsp Madras Masala, to taste
  • 1-2 tsp sugar, to taste (optional)
  • cups water
  • ½ tsp sea salt, or salt to taste

Garnishes

  • 4 tbsp cilantro, finely chopped (optional)
  • 1 tsp Garam Masala (optional)

Instructions

  1. Rinse and drain the chickpeas, then set aside.
  2. Heat oil in a medium-sized pan over medium-high heat and add chopped onions.
  3. Add the ground or crushed tomatoes and cook for one minute.
  4. Stir in the Madras Masala to create a paste and fry for a couple of minutes.
  5. Add the cooked chickpeas and water to create a consistent sauce.
  6. Season with salt and optional sugar to taste.
  7. Cover and simmer for 10 minutes.
  8. Serve with basmati rice if desired.
