Instructions
- Rinse and drain the chickpeas, then set aside.
- Heat oil in a medium-sized pan over medium-high heat and add chopped onions.
- Add the ground or crushed tomatoes and cook for one minute.
- Stir in the Madras Masala to create a paste and fry for a couple of minutes.
- Add the cooked chickpeas and water to create a consistent sauce.
- Season with salt and optional sugar to taste.
- Cover and simmer for 10 minutes.
- Serve with basmati rice if desired.
