Vegan Chickpea and Veggie Tikka Masala

The vegetables

broccoli, cut into bite sized pieces

green beans, cut into pieces

mushrooms, cut into fourths

chopped red onion
The protein and grains

chickpeas, drained and rinsed

ready cooked rice

cooked riced cauliflower (optional)
The sauce and garnishes

tikka masala sauce

to taste
cilantro (optional for garnish)

lime wedges (optional for garnish)
Instructions
- Preheat the oven to 450 degrees.
- Mix the vegetables with ¼ cup of tikka masala sauce and spread them on a parchment-lined cookie sheet.
- Mix the chickpeas with ¼ cup of tikka masala sauce and place them on another parchment-lined cookie sheet.
- Bake the vegetables for 20-25 minutes and the chickpeas for 30-35 minutes.
- If using, mix the rice and riced cauliflower together.
- Once done, serve the chickpeas and vegetables over the rice and top with more tikka masala sauce. Garnish with lime and cilantro if desired.
