Vegan Chickpea and Veggie Tikka Masala

Ingredients

The vegetables

  • 1 cup broccoli, cut into bite sized pieces
  • 1 cup green beans, cut into pieces
  • 1 cup mushrooms, cut into fourths
  • 1 cup chopped red onion

The protein and grains

  • 1 ½ cups chickpeas, drained and rinsed
  • 2 cups ready cooked rice
  • 1 cup cooked riced cauliflower (optional)

The sauce and garnishes

  • ½ cup tikka masala sauce
  • to taste cilantro (optional for garnish)
  • to taste lime wedges (optional for garnish)

Instructions

  1. Preheat the oven to 450 degrees.
  2. Mix the vegetables with ¼ cup of tikka masala sauce and spread them on a parchment-lined cookie sheet.
  3. Mix the chickpeas with ¼ cup of tikka masala sauce and place them on another parchment-lined cookie sheet.
  4. Bake the vegetables for 20-25 minutes and the chickpeas for 30-35 minutes.
  5. If using, mix the rice and riced cauliflower together.
  6. Once done, serve the chickpeas and vegetables over the rice and top with more tikka masala sauce. Garnish with lime and cilantro if desired.
