Ingredients

The base

  • 2 tablespoons coconut oil
  • ½ large red onion, diced
  • ½ tablespoon fresh ginger
  • 3 cloves garlic, minced
  • to taste sea salt
  • to taste ground black pepper

The spices

  • 2 teaspoons ground cumin
  • 2 teaspoons ground coriander
  • 1 ¼ teaspoons turmeric
  • 2 teaspoons cayenne pepper
  • 2 teaspoons paprika
  • 1 tablespoon garam masala
  • 1 teaspoon sea salt
  • ½ teaspoon ground black pepper

The sauce

  • 1 ½ tablespoons tomato paste
  • 2 teaspoons coconut sugar (optional)
  • 28 ounces tomato sauce

The main ingredient

  • 2 cans chickpeas, drained

The creaminess

  • 1 cup coconut milk
  • 1 tablespoon lime juice

Instructions

  1. Heat the coconut oil in a large saucepan over medium-high heat.
  2. Add the diced onion, minced garlic, and fresh ginger, then reduce heat to medium and sauté until the onions are translucent.
  3. Mix in the ground spices and tomato paste, adding a splash of water to keep it moving, and sauté for a few minutes.
  4. Add the tomato sauce, stir, and let it simmer for about 5 minutes.
  5. Blend the mixture until smooth and return it to the pan.
  6. Stir in the chickpeas, bring to a slight boil, then reduce to medium-low and simmer for 8 to 10 minutes.
  7. Pour in the coconut milk, stir, and simmer for another 3 minutes.
  8. Season with salt and pepper, squeeze lime juice over the top, stir, and serve.
