Instructions
- Heat the coconut oil in a large saucepan over medium-high heat.
- Add the diced onion, minced garlic, and fresh ginger, then reduce heat to medium and sauté until the onions are translucent.
- Mix in the ground spices and tomato paste, adding a splash of water to keep it moving, and sauté for a few minutes.
- Add the tomato sauce, stir, and let it simmer for about 5 minutes.
- Blend the mixture until smooth and return it to the pan.
- Stir in the chickpeas, bring to a slight boil, then reduce to medium-low and simmer for 8 to 10 minutes.
- Pour in the coconut milk, stir, and simmer for another 3 minutes.
- Season with salt and pepper, squeeze lime juice over the top, stir, and serve.
