Instructions
- Combine the chicken, onion, celery, carrots, thyme, rosemary, parsley, sea salt, black pepper, and bay leaf in a large Dutch oven or stockpot.
- Pour in the cold water to cover all the ingredients.
- Bring the mixture to a boil, then reduce to a simmer and cook for 1½ to 2 hours, skimming any foam that forms on top.
- Remove the chicken pieces from the pot and strain the broth through a fine mesh strainer to remove the vegetables and herbs.
- If not using immediately, pour the broth into jars for storage.
