Chicken Broth

Ingredients

  • 4 lb Whole chicken (cut into pieces or chicken pieces with bones)
  • 1 large Onion (peeled and quartered)
  • 3 stalks Celery (cut into 4 pieces each)
  • 3 medium Carrots (peeled and cut into thirds)
  • 2 sprigs Fresh thyme
  • 1 sprig Fresh rosemary
  • 2 sprigs Fresh parsley
  • 2 tsp Sea salt
  • 2 tsp Black peppercorns
  • 1 medium Bay leaf
  • 10 cups Cold water

Instructions

  1. Combine the chicken, onion, celery, carrots, thyme, rosemary, parsley, sea salt, black pepper, and bay leaf in a large Dutch oven or stockpot.
  2. Pour in the cold water to cover all the ingredients.
  3. Bring the mixture to a boil, then reduce to a simmer and cook for 1½ to 2 hours, skimming any foam that forms on top.
  4. Remove the chicken pieces from the pot and strain the broth through a fine mesh strainer to remove the vegetables and herbs.
  5. If not using immediately, pour the broth into jars for storage.
