Homemade Chicken Broth

Ingredients

  • 3 pieces chicken breast halves
  • 1 piece onion, quartered
  • 1 piece tomato, quartered
  • 1 cup carrots
  • 2 stalks celery
  • 2 cloves garlic
  • 2-3 sprigs thyme
  • 3 pieces bay leaves
  • to taste fresh herbs (cilantro or parsley)
  • to taste whole peppercorns
  • to taste kosher salt

Instructions

  1. Place all ingredients into the crock pot and fill with water.
  2. Cover and cook on high for 4 hours or low for 8 hours.
  3. After cooking, discard all the vegetables, strain the liquid, and remove the chicken for other recipes.
  4. If not using the stock immediately, store it in containers and refrigerate for up to 2 days or freeze for several months.
  5. When chilled, the fat will rise to the top and harden for easy removal.
