Homemade Chicken Stock

Ingredients

  • 1 carcass chicken
  • ½ large yellow onion
  • 2 large carrots
  • 2 stalks celery
  • 8 sprigs parsley
  • to taste salt
  • 10 pieces black peppercorns (optional)
  • 8-9 cups water

Instructions

  1. Place the chicken carcass into a large pot.
  2. Add the celery, carrots, onion, parsley, and pepper.
  3. Cover with water and season with salt to taste.
  4. Bring to a boil, then reduce the heat to low.
  5. Cover and simmer for 2 hours.
  6. Remove the large bones and vegetables, then strain the mixture through a fine mesh sieve into a bowl.
  7. Store in an airtight container in the fridge or freezer.
