Homemade Chicken Stock

Ingredients

  • 1 whole chicken carcass
  • 4-5 stalks celery, chopped
  • 1 whole onion, chopped
  • 3-4 whole carrots, chopped
  • 1 clove garlic, peeled
  • 2 tbsp whole black peppercorn
  • a handful fresh herbs (sage, oregano, thyme, rosemary, or others)
  • gallons water
  • to taste salt

Instructions

  1. Combine all ingredients in a large stockpot.
  2. Fill the pot with water to cover the ingredients.
  3. Heat on high until it reaches a boil.
  4. Reduce heat and simmer for at least 1 hour, or up to 6 hours for deeper flavor.
  5. Remove from heat and let cool.
  6. Pour into freezer bags for storage or keep in the fridge for immediate use.
