Homemade Chicken Stock

carrot (no need to peel, coarsely chopped)

celery (coarsely chopped)

Instructions
- 1. Combine the chicken and water in a large pot and bring to a boil.
- 2. Simmer gently for about 30 minutes, skimming off any impurities that rise to the top.
- 3. Add the chopped onion, carrot, celery, and bouquet garni to the pot.
- 4. Simmer uncovered for 3 hours, adding water as needed to keep the chicken covered.
- 5. Strain the stock through a fine mesh or cheese cloth before storing.
- 6. Remove the white layer of fat from the top when ready to use.
