Ingredients

  • 1 whole chicken (4-5 pounds), or a whole chicken in parts
  • 16 cups water (or just enough to cover chicken in pot)
  • 1 whole onion (coarsely chopped)
  • 1 whole carrot (no need to peel, coarsely chopped)
  • 1 stalk celery (coarsely chopped)
  • 1 leaves bouquet garni

Instructions

  1. 1. Combine the chicken and water in a large pot and bring to a boil.
  2. 2. Simmer gently for about 30 minutes, skimming off any impurities that rise to the top.
  3. 3. Add the chopped onion, carrot, celery, and bouquet garni to the pot.
  4. 4. Simmer uncovered for 3 hours, adding water as needed to keep the chicken covered.
  5. 5. Strain the stock through a fine mesh or cheese cloth before storing.
  6. 6. Remove the white layer of fat from the top when ready to use.
