Simplest Homemade Chicken Stock

Ingredients

  • 3 lbs chicken (whole, wings, legs, or bones)
  • 2 stalks celery, roughly chopped
  • 2 carrots roughly chopped, no need to peel
  • ½ tsp whole peppercorns
  • 1 leaf bay leaf
  • 1 whole onion, cut in half (peel and all)

Instructions

  1. Place chicken or chicken bones into a large pot.
  2. Add remaining ingredients and cover with cold water.
  3. Bring to a boil, then reduce heat to a gentle simmer.
  4. Scoop off and discard any scum that rises to the surface.
  5. Let simmer gently for about 2 hours.
  6. Pour the contents of the pot through a colander into a large bowl.
  7. Discard the solids after they have cooled.
  8. Transfer the stock to storage containers and refrigerate overnight.
  9. Once chilled, scoop off the solidified fat and discard.
  10. Freeze stock for up to 3 months or store in the fridge for up to a week.
