Simplest Homemade Chicken Stock

onion, cut in half (peel and all)
Instructions
- Place chicken or chicken bones into a large pot.
- Add remaining ingredients and cover with cold water.
- Bring to a boil, then reduce heat to a gentle simmer.
- Scoop off and discard any scum that rises to the surface.
- Let simmer gently for about 2 hours.
- Pour the contents of the pot through a colander into a large bowl.
- Discard the solids after they have cooled.
- Transfer the stock to storage containers and refrigerate overnight.
- Once chilled, scoop off the solidified fat and discard.
- Freeze stock for up to 3 months or store in the fridge for up to a week.
