Instructions
- Add the chicken carcass, vegetables, and herbs to a large slow cooker.
- Fill the slow cooker with water, up to the top.
- Cover the slow cooker, turn it on to high, and let it cook for at least six hours.
- Remove large pieces with a slotted spoon and check for any remaining meat.
- Strain the broth to remove sediment, using a wire mesh strainer or colander lined with cheese cloth.
- Salt the broth if desired, or leave it unsalted for later seasoning.
