Japanese Meat and Potato Stew (Nikujaga)

Instructions
- Heat oil in a small soup pot over medium heat.
- Add onion and stir a few times before adding the meat.
- Stir and cook, then add carrots and potatoes, mixing well.
- Pour in water and bring to a boil.
- Add soy sauce, sake, mirin, and sugar, then lower the heat and cover to simmer until vegetables are cooked and sauce reduces.
- Add Shirataki noodles and cook for 1 minute.
- Season with salt and add scallions before serving.
